ITALIAN ZUCCHINI SOUP

INGREDIENTS:
1 lb. Bulk Italian sausage
1 c. chopped onion
2 T. sugar
1 tsp. salt
1/2 tsp. basil leaves
1/2 tsp. oregano leaves
1/2 tsp. pepper
1 qt. canned tomatoes
4 to 6 c. cubed zucchini

DIRECTIONS:
In Dutch oven, brown sausage with onion; grain excess fat.

Add remaining ingredients; cover and simmer about 1 hour.

Yield: 2 quarts.

A wonderful summer soup that uses up some of the zucchini overflow!
