SMOKEY MOUNTAIN CHICKEN
(Recipe adapted from Ruby Tuesdays) From Stir Crazy on SCTV19

INGREDIENTS:
2 6-8oz pieces Chicken Breast
2 tbsp Durkees chicken and pork rub
BBQ Sauce, 2 Tbsp on each chicken
Shaved Deli Ham, ½ pound 3-4 slices on each (Try to get the smokiest ham possible)
¼ cup Shredded Cheese
3 Roma Tomatoes
1 bunch of Green Onions
1 Jalapeno
1/3 cup of Cilantro
Juice of 1/2 a lemon
DIRECTIONS:
To make the fresh salsa
Dice Tomato, Green Onion, Cilantro, and the Jalapeno. Combine into bowl and squeeze lemon juice. Let sit while the chicken cooks to meld all the flavors.
To make the chicken
Sprinkle Chicken Breast with the chicken rub and grill until done. (Drizzle a little olive oil on chicken before grilling to prevent them from sticking)
When chicken is almost done put a tablespoon or two of BBQ sauce on top. At the same time heat up the ham on the grill and put cheese the ham to melt.
To Plate
Put chicken on plate top wit ham and cheese the add as much fresh salsa as you wish
Bacon Broccoli Salad
Broccoli 3 bunches or 1 bag of florets
Bacon (diced and fried) ½ package
Raisins 1/3 cup
Creamy vinaigrette ¾ cup
Combine all ingredients and mix well (it is best to refrigerate for ½ hour to meld the flavors
Recipe for the creamy vinaigrette
¼ cup cider vinegar
1/3 cup water
1/3 cup olive oil
¼ cup honey
¼ cup parmesan cheese
2 Tablespoons pectin (found in the canning aisle at the supermarket)
1 egg
¼ teaspoon salt
½ lemon juiced
1 clove garlic
red pepper flakes
combine all in a blender and blend for 30 seconds
put into container and refrigerate for at least ½ hour and will keep for up to 2 week
Tropical Runner Smoothie
1 banana
1 8 oz can crushed pineapple
2 cups ice
½ cup pina colada mix
½ cup orange sherbet
combine all in blender and blend until smooth
makes at least 2 servings
