TURTLES

From Stir Crazy on SCTV19
www.sctv19.com

Fill up the plastic bottle with chocolate (place in a crock pot to keep warm) remember do not get any water in the chocolate.

Fill another plastic bottle with caramel.

Put some chocolate into the forms. (Do only one row at a time, because if you work too far ahead the chocolate will set up and the next layer will not stick.) Once you get faster at this, then go ahead and do more at one time. You will know when you take them out of the form, if they split, they cooled too long.

Take the paint brush and evenly spread the chocolate, make sure to get it all the way up the sides.

Add the nut with the rounded side down. Then add a small amount of caramel over the nut (only needs a small amount of caramel otherwise there is not enough room for the rest of the
chocolate).

Add more chocolate to cover, spread this all the way to the sides, otherwise there will be holes, and the caramel will run out.

Tap the form lightly to even out.

Cool turtles on the cookie sheet in a cool spot (outside or in the refrigerator).

When the chocolate is hard, remove turtles by pressing on the bottom of the forms.

HINTS:
In between using the plastic bottle of chocolate and caramel, you can keep it upside down in a cup, and for extended time, place in a crock pot of warm water. (Remember to wipe bottle well after removing from the water so that no water gets in the chocolate.)

Work fast so that the chocolate will not set up before you get the last layer of chocolate on.

If there is any caramel showing through the chocolate, before dumping tray, brush with a little chocolate to seal.

After dumping the turtles, if there are any with holes in them, set them to the side.

If there are any forms that the turtles do not drop out of easily, set them aside.

If the nuts are too big you may need to break them in half.
